APPLE CAKE Moana Coulson

4 medium apples (chopped or diced)

2 eggs (beaten)

2 cups sugar

1/2 cup oil

2 cups walnuts chopped

1/2 teaspoon vanilla

2 cups flour

2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoon cinnamon

Mix all ingredients and blend well.. Pour into well greased pan (9 X 13

inch) or cake (bundt) pan. Bake 350 degrees for 30 - 35 minutes for baking Pan or

60 minutes for cake (bundt) pan. Check for doneness with a toothpick in center of cake coming out clean.
