BERRY MANDARIN TOSSED SALAD     Sharon Marsh

 

Dressing:

            ¼ cup sugar

            2 Tbsp cider vinegar

2 Tbsp honey

1 ½ tsp lemon juice

½ tsp paprika

½ tsp ground mustard

½ tsp grated onion

¼ tsp celery seed

Dash of salt

    Oil

Combine all ingredients except the oil and microwave for 1 ½ to 2 minutes.  Stir until sugar is dissolved.  Whisk in oil.  Cover and refrigerate until ready to serve.

 

Salad:

8 cups Torn salad greens

2 cups sliced strawberries

1 can (11 oz) Mandarin oranges, drained

1 medium sweet onion, sliced in rings

1/3 cup slivered almonds, toasted

4 strips of bacon, cooked and crumbled

 

Toss salad ingredients in a salad bowl.  Just before serving, drizzle with dressing and gently toss to coat.

Serves 12-14
