 3     cups seeded and diced plum tomatoes

 1/2  tsp  garlic, minced

 1/3  cup  olive oil

 1     tbsp dried sweet basil

 1     tsp salt

 1/3  finely chopped purple onion (optional)

 1     baguette, cut in inch slices

 1/2  cup  grated Parmesan cheese

                       or

 1/4  cup  mozzarella cheese

 

1.  Combine first five ingredients in a bowl.  Mix in onion.  Let stand for

at least one hour so flavors can blend.

2.  Arrange baguette on ungreased baking sheet.  Broil to toast 1 side.

Turn slices over.  Use a fork to spread tomato mixture on each slice.  Spoon

remaining juices over slices.

3.  Spread with Parmesan cheese or mozzarella.  Try a few with each.  Broil

about five minutes until cheese is melted and bread edges are crisp.
