CARROT-RICE PILAF            Dee Swinyard

 

1 cup grated carrots

 ˝ cup chopped onion

 1 Tbsp butter

 1 cup rice, long grain, uncooked

 1 can (14.5 oz.) chicken broth

 1 tsp lemon pepper

 

Sauté carrots, chopped onion in butter.

Add rice, chicken broth and lemon pepper.

Cover, simmer 20 minutes
