CHICKEN PASTA SALAD      Joan Peterson

 

1 pkg. curly or bowtie pasta                1 bag fresh spinach

3 cups cooked, diced chicken              ¼  cup flat leave parsley

1 cup  olive oil                                    ½ cup green onions, chopped

2/3  cup rice vinegar                           1 can Mandarin oranges, drained

½ tsp. pepper                                      ¼ cup toasted sesame seeds

8 Tbsp sugar

1 tsp. salt

¼ cup Soy sauce

 

Cook pasta according to package directions. Mix together the pasta and chicken .

In a blender, mix olive oil, rice vinegar, pepper, sugar, salt and soy sauce.  Pour half of the dressing on the chicken and pasta and reserve the remaining half.

When ready to serve, mix spinach, parsley, green onions, Mandarin oranges and sesame seeds and mix with the chicken and pasta.   Add the remaining dressing and toss.
