CHICKEN ROYALE Simmons
8 chicken breasts 1 cup sour cream
2 Tbsp butter 1 tsp lemon juice
¼ cup chopped onion 8 slices ham
¼ lb fresh mushroom 1 pkg. Stove-top stuffing made by pkg. Directions
1 can chicken soup

Flatten each breast between pieces of plastic wrap using a mallet or rolling pin. In frying pan, melt butter and cook onion and mushrooms, covered until soft, about 10 minutes. Remove from pan and reserve. In same pan brown flattened breasts. Add more butter if needed. Remove chicken pieces from pan and reserve.
Add soup to drippings and blend well. Gradually add sour cream. Heat well but do not boil. Add reserved onions and mushrooms, and lemon juice. Grease baking dish and cut ham slices to fit breasts and place each ham slice in baking dish. Top ham slices with about ¼ cup stuffing. Then cover with chicken breast. Pour sauce mix over all. Heat in 325° oven for about 45 minutes or until hot and bubbly. I reserve a little sauce to put on top at time of serving.
