CREAM OF MUSHROOM SOUP   Rita DeBry

Delicious!  Just like Zuppa’s restaurant!  

 

5 cups fresh mushrooms, diced

1 large onion, diced

1 dash ground thyme

1 can (10 ˝ oz) Campbell’s condensed chicken broth soup

3 Tblsp. Flour

1 cup whipping cream

3 Tblsp. butter

Salt and pepper

 

Cook mushrooms, onion, thyme, and broth all together in saucepan for 10 to 15 minutes, until tender.  Pour ˝ of this mixture into blender.  Blend in flour.  Puree well.

Return puree to saucepan.  Add whipping cream and butter.

Stir over medium heat until thickened.  Salt and pepper to taste.
