Carol's Buns With Tails  Carol Orr

(Small batch)      

 

1 tsp sugar

1 ½ Tbsp yeast

½ cup warm water

3 eggs, beaten

1 cup milk

3/4 cup water

1/4 cup olive oil

1 ½ tsp salt

½ cup sugar

About 6 cups of flour

Soft butter

 

Dissolve yeast in ½ cup warm water with 1 tsp sugar..   Beat the eggs.  Scald the milk and then add the ¾ cup water, olive oil, salt, sugar.  Stir to dissolve the sugar. When milk is lukewarm,, add the dissolved yeast and the beaten eggs and about 6 cups of flour making a soft sticky dough.  Allow to rise twice stirring down each time with a wooden spoon.  Divide the dough into several pieces about the size of a grapefruit.  On floured board, roll out each piece to about the size of a salad plate.  Butter well then cut into four wedges.  Take large end and fold up 1/3 pull tip over and place on greased baking sheet with the narrow tip down.  Pull corners around to make a crescent moon shape. Bake at 350 degrees for 15-20 minutes.

 

ORANGE OR LEMON ROLLS: Roll dough as a jelly roll and spread generously with butter and sprinkle with white sugar and orange or lemon zest. Cut thick slices, and put into greased muffin tins.   Bake at 350 degrees for 15 – 20 minutes.  Time will depend on the size.
