EASY & DELICIOUS CHEESECAKE    Vikki Mills

 

1 Cup graham cracker crumbs (1 package of crackers crushed)

3 Tbsp melted butter

1  8 oz. pkg. cream cheese

1  can Eagle Brand Sweetened Condensed Milk

1/3 cup lemon juice

2   Tbsp sugar

½- 1  Cup pie cherries, drained reserving juice

1 Tbsp lemon juice,

sugar to taste

1Tbsp cornstarch. 

 

Mix together the graham cracker crumbs and melted butter.  Pour into pie plate and form crumbs to pie plate.

Bake:  350*  5 min.

 

 For the filling, beat cream cheese until fluffy with electric beater.  Add sweetened condensed milk, lemon juice and sugar. Blend well.  Pour into crust

 

Make the topping.  Take reserved fruit juice and add lemon juice, sugar to taste and cornstarch. Mix well.  Bring to a boil & stir until thickened but not too thick.  Add fruit.  Cool and then pour over pies and refrigerate until ready to serve.  

 

Note:  You may use blueberries, raspberries, or pineapple in place of the cherries.
