Preheat oven to 350 degrees. Spray 9x12 baking dish with cooking spray.
3 cups shredded hash browns (frozen or fresh)
(Doubled recipe = 24 oz. bag of frozen hash browns)
3 green onions, thinly sliced, using part of the green tops
8 slices Canadian Bacon, diced (about 3.5 - 5 oz pkg.)
2 cups shredded cheddar cheese
1 dozen eggs
1 - 12 oz. can evaporated milk
1/3 cup diced green pepper
1/3 cup diced red pepper
1 teaspoon salt
1/2 teaspoon pepper
In the pan, layer the shredded hash browns, green onions, Canadian Bacon, cheddar cheese.
Whisk together until smooth: eggs and evaporated milk.
Pour milk mixture over other ingredients in pan. Sprinkle the green and red peppers, salt and pepper over the top.
Cover with foil and bake at 350 degrees 60-70 minutes, or until eggs are set.
Serve with fresh fruit and sweet roll or toast. Serves 12 large servings
