LEMON BARS       Vikki Mills

This recipe comes from the Salt Lake Junior League Cookbook

 

Crust:                                                  Filling:

1 cup butter                                         4 eggs, slightly beaten

½ cup powdered sugar                        2 cups sugar

½ tsp. salt                                            ½ tsp. baking powder

2 cups flour, unsifted                           ¼ cup flour

            ¼ cup lemon juice

                                                            Rind of 1 lemon, grated fine

                                                            Powdered sugar

Crust:

Cream butter and powdered sugar.  Add salt and flour and mix well.  Pat into 9x13 greased baking dish.  Bake at 350 degrees for 15 to 20 minutes, until light brown.

 

Filling:

Mix all ingredients except powdered sugar and pour over the hot crust.  Bake at 350 for 20 to 25 minutes.  When done, sprinkle with powdered sugar.  Cut into squares when cool.
