LEMON CAKE      Carol Paul

 

1 lemon cake mix (Duncan Hines)

1 - 3 oz. lemon Jell-o

1 cup boiling water

¾ cup oil

4 eggs

1 tsp. lemon extract

 

Mix cake mix and Jell-o together. Add boiling water and stir. Add remaining ingredients and mix. Bake in a 9 x 13 pan at 350 degrees for 30 minutes. Punch holes in cake with a 2-prong meat fork and pour and spread frosting over the cake.

Frosting:

Juice of 2 lemons

2 cups powdered sugar

Mix until there are no lumps; spread over hot cake.
