MINI CHEESE CAKES    Dorothy Johnson

 

24 vanilla wafers

2 - 8 oz. pkgs. cream cheese

3/4 cup sugar

1 tsp. lemon juice

1 tsp. vanilla

2 eggs

pie filling of your choice

 

Place wafers in bottom of cup cake papers (in a cup cake pan). 

Beat cream cheese, sugar, lemon juice, vanilla and eggs.  Fill each cup

cake paper about half full of the mixture.  Bake at 375 degrees

for 15 min.  Cool 20 minutes and top with pie filling of your choice.

Keep in refrigerator.  Serves 24
