PARMESAN CHICKEN                   Phyllis Ross

 

4 chicken breast halves without skin

1/3 cup mayonnaise

1 tablespoon lemon juice

1 cup Italian bread crumbs

1/2 cup Parmesan cheese, grated

1 teaspoon dried basil

1/2 teaspoon garlic salt

1 teaspoon dried parsley

 

1.        Wash and dry chicken. Mix mayo and lemon juice and coat the chicken. Toss remaining ingredients together.  Roll chicken in bread crumb mixture and place on oiled baking sheet with sides.  Drizzle a bit of olive oil over the top before baking.

 

2.        Bake 1 hour at 325 degrees

 

Notes: Good to make for a crowd if doubled.
