PATSY’S GREEN LAYERED SALAD    Rita DeBry

My friend Patsy taught me how to make a green salad that everyone loves and will eat!

 

Layer these suggestions on a large platter.  Use what you have on hand. Lots of variations!

1st layer:  Use baby greens or leaf lettuces for a variety of color and textures

2nd layer: Finely diced veggies like green onions, celery, green pepper, frozen petite peas

3rd layer: Fruits, such as sliced oranges, pear wedges, apple slices, and avocados

4th layer: Dried fruits, craisins, dried cherries, dried apricots (I use scissors to cut up)

5th layer:  Nuts, such as almonds slivers or pine nuts. My favorite is cashews,

6th layer:  Salad dressing, drizzle over the top

(Black olives, cheese, and artichoke hearts can also be added)

 

Patsy’s Salad Dressing recipe is delicious and easy!

˝ cup red vinegar

˝ tsp. salt

1 cup sugar

2 tsp. dry mustard

1 cup canola oil

Puree together in blender the vinegar through the mustard.  Slowly add the oil until it is blended in well.
