PEACH COBBLER    Vikki Mills

 

2 cups peaches or 1 quart

½ cup juice (if the fruit is berries they may not have juice. 

They will make their own juice when they bake.)  

1 Tbs. cornstarch

½ cup sugar

¼ tsp. salt

Sprinkle of cinnamon

1 cup flour

1 ½ tsp baking powder

½ tsp. salt

½ cup sugar

¼ cup shortening (Crisco)

1/3 cup milk

Additional sugar

 

Grease 8x8 baking dish

Put peaches in baking dish with juice (if the fruit is berries they may not have juice.  They will make their own juice when they bake.)  

Mix cornstarch, sugar and salt. Pour over fruit

Sprinkle cinnamon over the fruit.

 

With a fork, mix flour, baking powder, salt and sugar. 

Cut in shortening then stir in milk.

Drop by tablespoonfuls over fruit as evenly as possible.  Sprinkle with sugar

 

Bake 375 degrees for 40 – 45 min.

 

Note: (You can use just about any fruit.  I have made it with boysenberries, & raspberries, strawberry/rhubarb & peaches.  I usually double the recipe and put in a 9 x 13 pan)
