PINEAPPLE UPSIDE DOWN CAKE

1 1/4 cups All purpose flour
2/3 cup sugar
2 tsp baking powder
2/3 cup milk
1/4 cup margarine or butter, softened
1 egg
1 tsp vanilla

Combine flour, sugar and baking powder.  Add milk, margarine, egg and vanilla. Beat on low speed until combined and then on med speed for 1 minute

Topping:
2 Tbsp margarine or butter
1/3 cup packed brown sugar
1 8oz can pineapple slices, drained & halved
Maraschino cherries

Melt margarine in baking pan.  Stir in sugar and 1 Tbsp water.  Arrange pineapple and cherries over the sugar-butter combination.  
Spoon cake mix over top
Bake at 350 for 30-35 min or until toothpick inserted near the center comes out clean.  
Cool 5 minutes , loosen sides and invert onto a plate.

Best served with cream or ice cream.
