PINEAPPLE ZUCCHINI CAKE    Moana Coulson

 

3 eggs

2 cups sugar

2 teaspoons vanilla

1 cup oil

2 cups Zucchini, peeled, grated and drained

3 cups flour

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon baking soda

1 cup crushed pineapple, drained

1/2 cup raisins

1 cups pecans or walnuts chopped

 

Beat eggs, sugar, vanilla and oil until fluffy. Add Zucchini and flour,

baking powder, baking soda, salt.  Stir in pineapple, raisins, and pecans

and mix well. Bake in 2 greased and sugared loaf pans at 325  degrees for

one hour or until a knife poked in the middle comes out clean or a toothpick. (Or bake in

9 X 13" pan at 325 degrees for 50-55 minutes or until done.)
