Pumpkin Pie Squares


 


1 cup flour, sifted

½ cup quick oats

½ cup brown sugar, packed

½ cup butter

1 can pumpkin (about 2 cups)

1 (12 oz) can evaporated milk

2 eggs

¾ cup sugar

½ tsp salt

1 tsp ginger

¼ tsp cloves

½ cup walnuts or pecans

½ cup brown sugar

2 Tbsp butter


 

Preheat oven to 350 degrees.  Combine flour, oats, ½ c brown sugar, and ½ cup butter.  Blend with mixer until crumbly.  Press into the bottom of an ungreased 9 X 13 pan.  Bake 15-20 minutes.  Combine pumpkin, evaporated milk, eggs, sugar. Salt.  Mix well.  Pour over baked crust an bake 20 minutes more.  Mix nuts, brown sugar, and 2 T butter.  Sprinklw over pumpkin mixture.  Bake an additional 15-20 minutes.
