SAUCE FOR CHICKEN ROLL UPS      Kay Call

 

2 small cans of pineapple juice                                   3 cloves minced garlic

4 chopped red peppers                                                2 cups honey

4 Tbsp cornstarch                                                        ¾ cup vinegar

2 cups pecans                                                              2 Tbsp dry mustard

½ cup soy sauce

2 small cans tomato paste

2 Tbsp sesame oil

 

Simmer on low heat for 15 to 20 minutes. 

 

Note:  To use, pour sauce over chicken that has been stuffed with dressing and rolled up.  Bake at 350 for 1 hour or done and tender.   This is enough sauce for about 30 people.

I get chicken breast at the store and have them tenderize them, this makes it much easier to roll up.
