SPAGHETTI CARBONARA            Leah Jesperson

½ lb. spaghetti

 ¼  - ½ lb. mild Italian Sausage, removed from casing

¼ lb. proscuitte or bacon cut into small pieces

4 Tbsp butter

3 eggs, beaten

½ cup parmesan cheese

½  cup chopped fresh parsley

fresh ground pepper

additional parmesan cheese

Cook spaghetti in salted water.  Melt 2 Tbsp of the butter in sauce pan.  Add sausage and bacon stirring to break up and brown.  

Drain spaghetti, add remaining butter and eggs stirring rapidly to melt butter and cook eggs.  Add cheese, parsley and pepper.  Stir.  Add meat mixture continuing to stir until eggs are cooked and mixture is blended.

Serve with additional parmesan cheese.
