ZUCCHINI BARS          Kay Call

                                                                                               

3 eggs                                                                          ¼ tsp. Baking powder

2 cups sugar                                                                2 tsp soda

1 cup oil                                                                      3 tsp cinnamon

2 cups raw zucchini, grated                                         1 tsp (scant) salt

2 cups flour                                                                 2 tsp vanilla   

                                                                                    1 cup copped nuts

 

Beat eggs; add sugar, oil and zucchini.  Add dry ingredients and mix well.  Add vanilla and nuts.  Pour into large 12x16 pan and bake at 350 for 20-25 minutes.

This can also be baked as Zucchini Bread.  Pour mixture into 2 greased and floured loaf pans.  Bake at 350, for 1 hour.

 

Frosting:

1 – 8 oz pkg. cream cheese

1 stick butter

1 pkg. powdered sugar

1 ½ cups chopped pecans

1 tsp. Vanilla

 

Let cream cheese warm to room temperature.  Beat together cream cheese, butter, powdered sugar, Vanilla.  Stir in chopped pecans,.  Spread on top of cooled baked mix.  Cut into bars.
